When do you harvest mustard seeds from the plant?

I have grown mustard plants and want to harvest the seeds and make some tasty mustard. At what point should I harvest the seed pods? What should I do with them after I pull them off of the plant?

   Wait until this fall when the heads “go to seed”. Lay them out to dry well.
